In Tobago, the season is about getting ready for a fresh start. That means cleaning down the house, adding a fresh coat of paint, maybe even switching things up with a little redecorating, all before the new year rolls in. Of course, in between all of that, the kitchen stays busy with baking, cooking, and preparing for the big day.

And then comes the reward we all look forward to: a proper Tobago Christmas feast. Ham, turkey, pastelles, black cake, sweetbreads, plenty of food, plenty of love, and even better company. That’s truly the best part of Christmas for me.
